#Kid's Lunch boxes

Couldn't help myself from taking pictures. I know I do them almost everyday (and I love making lunches) and felt why not share these when time permits. I am sure these pictures will give me an idea for some of those days when mind goes blank what to pack. These could get boring as my kids eat same old and I repeat a lot of them and it could come to a stage where, someone could guess what I have in stock in my pantry and refrigerator LOL...
Almond butter S/W, red peppers strips, grapes, Avocado slice and yogurt. Multigrain cake s/w with almond butter for snack

Chicken hot-dog pieces in thermos, milk, yogurt, avocado s/w, Apple slices and a banana.

Ghee aroma filled the kitchen


Aroma of ghee filled the air. Nothing can beat a blob of ghee in rice with dal or a parata. Making it at home is simple, easy and tastes great. All it needs is to bring butter to boil and little patience to avoid it from burning. You will end up with this goodie to enjoy!

Roasted red pepper hummus



Cilantro and Red Pepper Hummus (I missed Cilantro in my preparation above, its a good twist to your taste :))

Ingredients:

-Soaked (overnight) and pressure cooked Chickpeas - 2 cups  OR 1 Can Chickpeas drained and rinsed
-1/2 Cup Chickpea Water (leftover water from pressure cooker or from can)
-1 to 2 tbsp Extra Virgin Olive Oil
-3 Garlic Cloves
-3 tbsp Tahini (sesame butter)
-Splash of Lemon Juice
-1/2 cup roasted red peppers
-2 tbsp Cilantro leaves (few for garnish)
-Pinch of Cayenne pepper

Puree all ingredients in a food processor and blend until smooth. Add the Chickpea water slowly and as needed to make the hummus the proper consistency. Add roasted red peppers and blend until desired texture. Garnish with Cilantro and Cayenne pepper.

*Note: If using soaked chickpeas, add salt to taste.
